One of the most pollinator-attracting plants on the farm! Cerinthe is used more as foliage in our bouquets, but its blooms are also impressive due to the array of colors it displays. A single stem in full bloom can be silver, blue, purple, and green all at once. Featuring gracefully arching stems with drooping bell-shaped flowers, these plants are easy to grow and produce a bumper crop for several weeks.

Harvest during the coolest hours of the day when the flowers are purple. Immediately treat the stems by dipping them 2 to 3 inches into boiling water for 7 to 10 seconds, then place them in cold water.
